Queensland's very own Gympie goats cheese soufflé delicately baked
twice, topped with a salad of pear, walnut and herbs on a red capsicum
coulis, garnished with Kangaroo proscuitto crisps

Tender Eye Medallions
Seared medallions of tender eye fillet served on a warm root vegetable &
spinach panache finished with roasted garlic and chive aioli

Grilled Local Prawns
Succulent Queensland prawns grilled, served on rice noodles and chilled
Asian greens, drizzled with a chilli, ginger and mango salsa


Dessert

Lime & Vanilla Bean Custard Pie
Lime and vanilla bean custard pie, served with raspberry ripple ice cream,
white chocolate shavings and blue berry syrup

Dark Chocolate Mousse
A dark chocolate mousse coupled with roasted macadamia biscotti and
double cream dusted with snow sugar

A variety of Queensland seafood from our Great Barrier Reef served chilled
with hot sand crab flans and oysters Kilpatrick, laid on a bed of fresh garden

A selection of hand chosen cold meats including; ham off the bone, crisp
shaved proscuitto, chicken roulade, smoked salami, aged Kenilworth
cheddar, matured goats cheese, served with antipasto delicacies and
fresh baked bread

Tia Maria tea bavarois served with lime pistachio wafers on strawberry compote

Special Dietary menu

The following codes will assist you select the most appropriate meal for your journey.

All requests for special dietary meals must be finalised with Traveltrain reservations and paid for no later than four days prior to departure. Meals in Queenslander Class are included in the fare, but four days notice is still required.

All meals consist of a main meal (with bread roll) and a dessert. Traveltrain will advise from which car your meal will be available.
